Baked Chicken Recipe – Family Friendly Meal

Here’s another yummy recipe for you.  When my family smells this
meal in the oven they longingly ask, “Are we having baked chicken?”
I say “yes” and they have a big smile on their face.  What more
can you ask for….

Baked Chicken

Wash and skin 1-3# chicken (depending on the size of your family)
You can use white or dark meat

Place chicken in 9×13 pan – preferably glass or stoneware

Sprinkle chicken with salt and pepper to taste.

Now for the secret ingredient – Tarragon
Sprinkle the chicken with ½ – 1 teaspoons of tarragon
depending on the amount of chicken you used.

Bake for 1 hour and 15 minutes at 350 degrees (If you use boneless chicken, you will probably only have to bake it for about 45 minutes.)
Half way through baking baste chicken with their own juices.

I usually put several scrubbed potatoes in the oven next to the chicken. Then all I have to make while the chicken is in the oven  is a salad and maybe another vegetable to complete the meal.

I think basting the chicken once or twice really makes this meal even better. I just tip the pan up a little and use a silicone brush to brush the collected juices back up onto the chicken.

The great thing about this meal is that the oven does all the work. All you have to do is just wash a few items and season them. Use the time that the chicken and potatoes are cooking to either get caught up on some dishes or laundry or to read to your kids.

You can declare “dinner’s in the oven” time as catch up time or play and reading time with your children. You can promise them all day that once you get dinner in the oven, you will play a game with them or take a walk outside if the weather is nice. That makes this an even more family friendly meal because it’s giving you some time to spend with your family instead of slaving over a hot stove.
