Easy Kid Recipes – Finger Sandwiches

When thinking about easy kid recipes, finger sandwiches come to mind. Who doesn’t like a fun way to eat fancy? Maybe my kids are wierd, but they love fancy party things.

Instead of just making plain sandwiches, use some alternative breads or crackers and make an ordinary sandwich much more fun!

For the base of your finger sandwiches you can use regular bread and cut it up into triangles, squares or circles or you can use crackers or tortillas. If you use tortillas, just spread the ingredients on the tortilla and roll it up. Then you can cut the tortilla crosswise into 1-2″ pieces. They will look like little wheels with filling inside.

For the filling of your sandwiches you can use a variety of ingredients or just 1 ingredient. Some suggestions would be:

  • Cream cheese mixture (I’ll post my recipe in my next post)
  • Tuna salad (recipe to come)
  • Egg salad (recipe to come)
  • Lunch meat with cheese, cucumber and tomato
  • Peanut butter and jelly

We have to go to a wrestling tournament where all the families from our team bring something to make a meal. Schools have gotten a lot more strict about people bringing crock pots and now many of them are not allowing crock pots anymore. Maybe they want you to buy from their concession booth or maybe they just don’t want to pay for the electricity.

Either way, we have to figure out a way to bring good filling food without using heat. That’s where the finger sandwich idea came up. My 13 year old daughter is a wonder at coming up with great ideas. She got all excited that we could make finger sandwiches and was startting to come up with 5 different types that she wanted to make. I told her we weren’t going on Food Network and that these were just simple people that wanted some food to eat.

I’m sure we’ll have to compromise and have a couple different types to make her happy. I think the tortilla rollups will be a hit because you can just grab them with your hand and pop them in your mouth and still get a good taste.

I’ll post my recipes for fillings in my next post.
